Reorganizing content folders

Laid down a new structure for posts and their accompanying assets. Every section now gets a predictable year/month/slug home, with matching folders under assets/ for screenshots, diagrams, or downloads.
Documented the conventions in the repo README so collaborators can follow the pattern without second guessing.
